Private chef’s fresh juices cater to clients’ health needs.

“You can’t eat a box of kale,” Sonya Bolerjack, chef-owner of Aspen Chefs To Go, says with a laugh when asked about the motivation behind her booming juicing business. But in all seriousness, it was her desire to further boost the health and immune systems of her longtime clients who suffered from a variety of serious ailments.

“The concept of healing from the inside out made good sense to me,” she says. “You just get so many more nutrients and real health benefits that way.”

Piggybacking off her private chef business, which evolved during the COVID years to include health consultations and meal planning and drop-off, Bolerjack works out of a commercial kitchen in Old Snowmass. Activating a cold-press juicer to crush and squeeze juice from fresh fruit and other produce, she turns out tasty juices that she says bump up nutrition and vitamin intake.

Health benefits aside, Aspen Juice To Go has also served as a way to expand Bolerjack’s private-chef business. She now provides juices for Aspen Board of Realtors events, for instance.

“It’s all growing by word of mouth,” she says. Pun intended.
